Happy Birthday Molly


While the general direction of my blog has changed recently (less of a "Look What We Did Today" and more towards "Life, Opinions and Look What I Ate Today"), I still believe sharing special moments with friends and family is exciting, helpful (mass communication) and relevant. It creates the ultimate journal of sorts, categorizing events in your life with both text and pictures. On my list of things to do is look into a company that will "blog to print" and get all this good stuff into a photo book. I would say blogging is the current, popular form of scrapbooking, which I have done since about the age of 12!!!

So that was my opinion... and here is my fun event to share...

This past Saturday we celebrated Molly's second birthday. Hallie and Chase hosted a Popsicle-themed party complete with a bounce house. Y'all know I love to host a good themed-party. And just as much I love attending one. In general, I love creativity, whether I am doing it or appreciating the work of others. The festivities started with a "Popsicle" invitation and went from there. 


Not one to miss out on any sort if dress-up opportunity, Matt and I made coordinating Happy Birthday T-shirts. (Because don't most people do things like this for a two year olds birthday party?) You might recall the Minnie and Micky T-shirts for Blake's first birthday party! Needless to say they were a hit and if there was an award for "most committed guests to the theme, I am pretty sure we would have won! 

My favorite part was the gift request: an unwrapped toy for Molly to donate to Toys for Tots. I love that Hallie and Chase decided family gifts were enough and that the rest can go to the less fortunate. I love buying gifts for the little ones in our life and I love buying gifts for the less fortunate, so either way it is a win!!!

So in a nutshell, the party was great, the company was great, the wagon of Toys for Tots was full and I captured some great pics for the special family. Not a bad way to spend a Sunday.

Lunde (no carb) Lasagna

This little number has proven to be quite delicious. As much as it nearly killed me to make a lasagna without pasta. Wait, what am I saying ... (disclosure) I have never actually made a homemade lasagna before (all Italians gasp here). But it did make me really sad to initially think of eating a lasagna without pasta. Turns out the combo of zucchini and eggplant with Matt's incredible Tomato Passata hits the spot every.time. We have made this little guy about 3 times now - once making enough to freeze - kind of like our very own all natural, paleo friendly freezer meal. 





Breakfast for dinner (Sausage & Butternut Squash Frittata)

Breakfast for dinner is an all time fav. Why? Several reasons, and yes I will list them for you:

1. Breakfast meals are usually easier to make than dinner entrees
2. If you haven't had a good brunch in awhile it tastes SO good
3. You get to eat more calories for dinner than you do for breakfast so you can really dive right in!
4. If you get to eat pancakes with your breakfast-dinner meal, your food coma seamlessly transitions right into bed time

I would imagine there are way more than 4 reasons - but this is a good start. Matt accidentally tripled the sausage amount - but who is going to complain about that? Next time though we might stick with suggested serving of sausage so we can taste the rest of the frittata.


Did you know that this is a) What a Butternut Squash looks like and b)You can roast it. I mean, seriously - was I living under a rock! So many new foods.

Here is another recipe for you. Matty made this one the other day for brunch. It was our very first time to not only purchase, but eat kale. I think we may try a little less kale next time (not that it is an acquired taste or anything) and ease into the concept!

The Most Expensive (Pumpkin) Granola Ever

Yes, that is the title I am giving this new granola recipe I found online. Clearly all I do now in my free time is google #paleo #healthyeating #glutenfreedairyfree recipes. While I have never, EVER, been in to cooking pre (let's call it) the epiphany...I have decided that if I am going to commit, I need to really jump head first onto this bandwagon! So yes, I am pinning the crap out of recipes and, wait for it, actually making them! Matt is #sosurprised! We made an incredible pasta-free (gasp) lasagna for some friends the other night, a turkey chili last night (recipes to follow) and my incredible unique, frustratingly-expensive granola bars. I am not going to lie to you...the recipe sounds better than it tastes. But to caveat, this is coming from the girl that LOVES gluten and dairy. So for a no gluten/no dairy dessert - it is probably great. At least it had chocolate on it!

I feel like I could easily say - oh wow, paleo, you are just as good as my regular recipes. Two things: 1. That would be a lie, and 2. Please, like I had any recipes before now. But seriously, are we going to try to compare a chili with ground turkey, carrots and celery to the buffalo mac and cheese dish I ate in Chicago a mere 3 months ago!?!? No. Obviously mac and cheese wins every.time. But I have decided it isn't fair to just say "blah" to these delightful new recipes I am finding, and rather, enjoy the new flavors, foods and combinations I never even realize existed.

So - back to the granola. I call it "the most expensive granola ever" because, well this first batch really was. $67! Matt nearly had a cow when he realized the entire bill was for one "snack". But to be fair, and as I reminded him, (hopefully) these are ingredients we will now be using going forward for several different recipes. Ingredients such as...Coconut oil (did you know it comes in a solid form - yuck), pumpkin seeds (who knew you could buy these and not just get them from your carving pumpkin), flax seeds (don't get me started) and so on! We are Italians in Lundeland - so the only oil we were cooking with was olive oil. Honestly though, I could buy into these new ingredients. Everything I read about these "super healthy new, slightly less delicious" ingredients seems quite positive. Also, how can you dislike something that makes you feel better. So earthy grocery stores that used to make me uncomfortable because I didn't know any of the foods you were selling - watch out - I'm coming in, wallet and all!


Here is a look at - and recipe for - the granola. Hopefully you have more of the ingredients already in your pantry so it is just a Pumpkin granola - and not a budget breaking snack! It is growing on me though. I will probably switch out the golden berries next time and go with dried blueberries. Something a little less tangy! Thanks to the internet and all of the very talented chefs that make snacks like this a possibility!

Gluten: Fad or Forever

The Lundes are going Paleo. Well Lady Lunde is - Matt is just being a team player. Today I went to one of those "all natural" grocery stores and bought things I never even knew existed, such as...Coconut Milk, Flour and Sugar. This has been a long time coming for me and I think I have finally accepted the fact that gluten and dairy, while ah-mazing and unbelievably delicious, are not welcome in my digestive system. After a 2 month cleanse (cleanse in the truest sense of the word) I have been migraine and stomach-trouble free. I took two weeks "off" and went immediately back to a war zone of nausea, stomach trouble, headaches and so on.

So at some point - I guess a person just has to accept the truth, put their big girl pants on and suck.it.up. I used to think this whole gluten-free fad - was just that - a fad. To quote Seth Rogan in "The End of the World" when asked, "What is Gluten?"

"Gluten is Calories! It is fat!" IT IS EVERYTHING!

In a nutshell, it manages to be in everything that tastes good, and in some form or another seems to appear in almost every dish I have been eating the past 30 years of my life! And don't get me started on dairy withdraws. What is a good bottle of wine without cheese? A latte without milk? Chips without rotel?!?!?!? If I could pick between the two - I think I might choose cheese over gluten. But alas, I don't have that option and must resign myself to giving up both. (Insert small violin playing a pity party for me here!)

So for the girl who ate cereal for dinner when Matt was away and candy for lunch - this is a whole new world of having to "care" about what I eat. French fries at happy hours, donuts for breakfast, warm fresh bread at dinner - no more! Now I eat more lettuce than anyone can possibly need, have learned of at least 3 new vegetables and can make dark chocolate chips "feel" like an entire dessert plate!

Until now I spent the past two months sulking and eating the bare minimum - meat, veggies and fruit. Matt tried out several new recipes for me - but I just wasn't into it. Well after my two weeks off, feeling as though my head was going to implode and regularly curled up in the fetal position...I am going to face the facts. More importantly I am going to embrace the facts. So I have been researching recipes and am pleased to report - it might be okay. In fact, it could be better than okay, it could be great!

So Paleo - here I come. Sour patch kids, Starbucks pumpkin spice lattes, cereal, peanut butter/jelly sandwiches, soft drinks, and so on - adios! Healthy and delicious foods I have never heard of...let's do this!

Costumes, Chili & (Pumpkin) Carving

The 4th Annual Lundeland Halloween Party was a success. Saturday we had 30 of our good friends over to celebrate one of my favorite holidays!  Not that we need an excuse to dress up, but yes, costumes were mandatory. 


Matt and I went as Sheldon and Amy from the Big Bang Theory. I was not overly impressed with our effort this year; however, hard to argue with a total cost of $10. Lucky was an adorable little prisoner, and my dad brought his A-game as Clark Kent.

Too Many Chefs Club: Halloween Edition


We are over a year into our Chef's Club adventure and the experience continues to amaze me. The bond of sharing dinner with a group of friends each and every month is a special experience. I think about the special things our group has gone through over the past year plus: a wedding, a baby announcement, work highs and lows, and so on. Next month we will welcome the newest member of our group, little Rhys Parker L. We have eaten incredible meals together, but more importantly, we share a small part of life together. We came together through food, and we continue to stay together as friends. This past dinner was no exception!

Wanting to "Want to"

The setting was a late evening, sitting around the table with my cousin and his wife. It was one of those conversations about the deeper meaning of life, being happy, giving back and being a meaningful contributor to society at large. 

We talked about work and how work can get in the way of other life activities that just didn't seem as difficult to do in our younger years: Time with friends, playing sports/working our, going to church, the list goes on. Work comes with stress, travel, early mornings, long days and some amount of pressure. And to think that I actually love my job! The list goes on for those that haven't found the job for them yet. 

So where is the time for working out, volunteering, learning a new language, taking up yoga, getting thirty minutes of doctor-recommended cardio a day? Dinner dates with your hubby, time with friends, practicing the piano or calling your family to check in? Currently child-free, this list doesn't even contemplate kiddos. 

Well, the first answer is probably making sure you have a balance between work and play/family. I am still working on finding this perfect balance, but I have not given up hope of successfully managing my career and being a lovable friend/wife/daughter/sister/citizen all at the same time! I am probably a little unbalanced on working too much, but the first step is admitting it. Lol!

But this post is not about the work-life balance. I can, and maybe will, write an entire novel on that topic. This post is about the concept that came about through a late night conversation with my cousin and cousin-in-law. The idea that, with limited time outside of the 40-60 hour work week, what all can you truly  be motivated to accomplish? What you "want" to want to do, or should you focus on what you actually want to do. I realized I have been waiting and wanting to "want" to practice the piano, and wake up early to run or do yoga. But years into it, I have yet to regularly accomplish either. So what is it that I actually want to do with my free time...to decompress but at the same time still feel a sense of accomplishment and productivity? I think I want to learn to play the violin. I have had the thought for years but never moved past just thinking about it. So I have started the research phase: buy or rent, in-person or online lessons, etc. and if I can continue to stay motivated through my research we just might hit the "go" button. 

What to you want to do...verses wanting to want to do? Because for me, yoga and piano might still be worthwhile activities, but they are moving to the should column and violin can be what I do for fun...until it's not!

I would be lying if I said I waited until October to start decorating for Halloween. It was technically the last week in September...so close! I ended up making a lot of new decorations thanks to Pinterest. Rather than throw up decorations, I have tried to keep my areas is decoration contained! I kind of love the (almost) end result!

Well Hello Again

Well Hello Again Indeed! 

Hard to believe I took a 5 month plus hiatus from blogging. Truth be told there are several reasons, which typed "outloud" in no particular order would be:  

1. I have a love/hate relationship with social media. 

 Honestly, I feel a bit bi-polar about the entire thing. I think it is great and wonderful while at the same time scary and overwhelming. It is a freeing sensation to have the control to share what you want with the world. Like you have a say and other people "have to/get to" listen. It is equally as terrifying to think that what you share with the world can never be taken back. It could also, one day, unexpectedly, be used against you. It is fun to see pictures of friends, baby announcments, moves, new homes, etc. But it can also make you feel like you are 5 years behind in child-rearing, need to buy a bigger house, document your vacations better and feel guilty when you come home from work on a Tuesday, watch TV in your elastic waisted PJs and have nothing interesting to Instagram or hashtag about. It keeps you connected with the world and at the same time can make you feel entirely alone. You can get incredible ideas and enjoy HOURS upon HOURS of craft-time, cooking with friends and "buying things", while at the same time make you feel as though your decorations, recipes, home decorating is never going to be enough. So in a nutshell I think it is great, but then I hate it. The past 5 months I was feeling less than steller about the entire thing. 

2. Life got in the way. 

I want to say life got busy, but isn't life always busy? If it wasn't, blogging would be IMO-only posts. Where would all the real-time life activities be? But the last 5 months it has felt like a different kind of busy. It felt right to take a break from blogging about my oh-so-perfect world and spend time enjoying my real-life-blessed-but-sometimes-difficult world. i.e. Reality. Living in the moment I believe they call it. I got caught up in going to events just for the pictures so I could go home and blog about it. I got updates on my friends through their blogs rather than actually talking to them. It all started to feel a little fake. So I hit the "reset" button. I just recently read a blog (http://iambeggingmymothernottoreadthisblog.com/) that made fun of having inner peace and happiness by doing yoga on the top of a mountain, or looking peacefully upon the waves of a perfect beach. It said, do what (the bleep) you want. I like that approach, do what you want, when you want it. In the past I have been, do what you want because you "should." I started a blog, kept up with it, started veiwing it as a chore, continued doing it, until one day I just stopped. And I have not felt like blogging again until today. So who know what tomorrow will bring. Maybe a regularity of posts - maybe nothing. 

3. I started taking less pictures. 

What is a blog post without pictures (besdies this one). I mean, something has to break up all the text! For the picture queen (ahem, me!), I can confidently say my lack-of-picture took us all by surprise! I haven't used my magic making/fancy camera since the hiatus. What.The.Heck. Again, I just didn't feel like it. I think it was the whole step of having to download the pictures to the computer and then upload them. #laziness 

4. My relationship with Social Media continues to evolve. 

Social media in some form or fashion is here to stay. My question continues to be - where will our (me and the internet) relationship end up? Social Media and I started our relationship by going steady in college, my first "one" if you will, with AIM instant messanger and "awesome" away messages that let people know how cool we were because we weren't in our dorm room. It notified others that we had friends - and (wait for it) we were out with those friends. We could brag about being at our sorority house, or parties with the fraternities. And then it could hurt your feelings when other people posted they were out with your ex-boyfriend. Then Facebook came out and I thought, ok man, let's take it to the next level. Now you can see pictures and we can "poke" each other. And we kept up a solid, laid back, relationship for years. Never really sharing that much, but just enough to keep each other interested. I made sure to upload pictures every once in awhile, and Facebook didn't let me forget my password. Then Facebook decided it wanted to see other people, not just us college kids. And so it got weird. So many "adults" and "kids" started wanting to be "friends." No thanks. Being a stubborn, Italian "woman" I put my foot down. But it reeled me back in with its alluring curiousity to see what my friends were up to. Facebook and I were on and off for years. We grew in our relationship and set some ground rules like "no more bikini pictures," "keep the drunk pics to a minimum" and "do not ever accept a work colleague as a friend." Facebook understood that I needed my privacy and wasn't going to let strangers into our relaionship. I'm pleased to say we continue to follow those same rules today. Things like Four Square and Come Rob My House (I mean, "check-in") came and I said "I'm a one woman Social Media kinda girl." Games became available on Facebook and I said "let's keep the TV out of the bedroom." Twitter came and straight up irritated me. It was aggressive with its "at" signs and "hashtags." Why are there so many constanants in the same sentence. I subscribed to those who said "Social Media is taking over," "Kids these days won't know how to write in complete sentences because they can only talk in 140 character phrases." I said no to bringing Twitter into our lives. But then Twitter never went away and I got curious. Not like, "let's kiss a girl in college to say we 'experimented' type curious" but more like "what am I losing out on by only dating one social media site?" So Facebook and I continued until I couldn't resist any longer. What were all these ####s about. I signed up, Facebook understood, tweeted about 36 times, got overwhelmed and things fizzled. Twitter didn't respect my privacy like Facebook, and honestly I just felt old and confused by "the kids these days." The one thing I did take away from my relationship with Twitter was a love of #hashtaguse. Talk about exhilerating. And who knows why. I love it. Honestly it isn't that special. It is a group of words that need not be grammatically correct, no punctuation necessary and has a number sign in front of it. But still, #heartmelt! Without Twitter though I had to say goodbye to the adorable hashtag. #Nicewhileitlasted. Until, that is...INSTAGRAM. Instagram took the best of Facebook and Twitter: Pictures (that you can make look ah-mazing) with a #caption. So now I exist in an average relationship with Facebook and Instagram with blogging and Pinterst ever-so-ready for me on the side. To make my point here - social media is here to stay. We have been together for over 10 years, we have shared a lot that can (literally) never be taken back and deep down we really really like each other. So what the future has in store... who knows. Might be more blogging, pinning, posting and hashtagging - or we might decide to keep our relationship on the downlow and silently stalk our fabulous friends and (sometimes) wonder if their lives are better than ours. 

5. The last reason (although again there was no particular order to this list) is personal. And after making points 1-4, we will see if personal ever makes public.

Reuniting And It Feel So Good!

Traveling to La Juanta for Oma's funeral brought us through Denver. On our way to LJ we didn't get into Denver until 11pm, so we grabbed the rental car and drove straight there arriving around 4am. On the way back however, we had time to stop in Denver to have lunch with Heather and her hubby. It was SOOOOO good to see my woman! 

It is fun to have friends all over the world...always someone to see!

Celebrating Mamie Sisson

 Oma passed away two weeks ago. And while my heart is broken, the tears haven't made their way out yet. I am relieved for her - to be at peace with Papa - and I am mad she is gone. I assume sadness will follow suite shortly. In the meantime, I can't forget just how amazing she was. Any woman that raises 7 kids (born within 10 years of each other) and provides them with the experiences that she and Papa did is worth admiring! She was remembered for her smile, big heart, optimism and devotion to her family!

We celebrated Oma's life with all of her 7 children and 11 of her 19 grandchildren present (the rest in spirit). It was good to see everyone, and I was glad to be there as we laid her to rest.

Matty Turns the Big 3-0

Well if I am going to make Matt's birthday weekend all about me then I can proudly say - I did it! I managed to hold in all of my surprises and make the weekend perfect. But realistically Matt's birthday is not all about me - so let's talk about the birthday boy. He. Had. A. Blast! When I asked Matt what he wanted to do for the big 3-0 he said "play golf with my dad and friends." So that is what he did!

I surprised him by getting all of his brothers in town. I flew in his brother and Nathan, and Mark drove in from Houston. Nathan and Matt played 18 on Friday, Saturday the entire group played, and Sunday they had a foursome with Nathan and his dad. 

Saturday night we had all of our friends over for a BBQ and the most amazing cake EVER!
